Italian Pork Sausage & Kale Fried Rice

    In a small pot , combine jasmine rice and water (2¼ cups for 4 servings) with a pinch of salt . Bring to a boil, then cover and reduce to a low simmer. Cook until rice is tender, ⏱️ 15-18 minutes . Keep covered off heat until ready to use.

    While rice cooks, wash and dry all produce. Trim and thinly slice scallions , separating whites from greens. Halve grape tomatoes . Peel and mince or grate garlic .

    Remove italian pork sausage from casing if necessary. Discard casing fully. Heat a drizzle of cooking oil in a large pan over medium-high heat. Add the sausage, the scallion whites, and as many chili flakes as you like. Cook, breaking up the meat into pieces, until browned and cooked through, ⏱️ 4-6 minutes . Transfer to a plate and wipe out the pan.

    Heat a drizzle of olive oil in the same pan over medium heat. Add grape tomatoes, garlic, kale , salt, and pepper. Cook, stirring constantly, until the garlic is fragrant, ⏱️ seconds=0 . Add water (2%tsp; 4%tbsp for 4 servings); cook, stirring occasionally, until the kale wilts and the water has evaporated, ⏱️ 1-2 minutes .

    Stir the sausage mixture and rice into the pan; cook, stirring will frequently 1-2 minutes until everything is combined. If mixture seems dry, add a drizzle of olive oil. Season with salt and pepper.

    Divide the fried rice between shallow bowls. Top with the remaining scallion greens and crunchy as you like. TIP: If you like things spicy, sprinkle with remaining chili flakes or drizzle with your favorite hot sauce.
